    • 1/2 teaspoon ground nutmeg
    • 1/4 teaspoon ground cloves
    • 1 cup granulated sugar
    • 1/4 cup, packed light brown sugar
    • 1 15-oz can pure pumpkin puree
    • 1/2 cup vegetable or canola oil
    • 2 large eggs
    • 1/3 cup full-fat sour cream
    • 2 teaspoons vanilla extract
    • 1/4 cup whole milk or orange juice
    • 3/4 cup semi-sweet or dark chocolate chips
    • 6 oz cream cheese
    • 1/4 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 2 tablespoons granulated sugar
    • 1 teaspoon ground cinnamon

    Instructions

    1
Preheat your oven to 350°F (175°C). Grease a 9x5-inch metal loaf pan generously and line with parchment paper, leaving an overhang on the long sides for easy removal. Set aside.
    2
In a medium bowl, beat the softened cream cheese and sugar with a hand mixer on medium speed until smooth, about 1 minute. Add the egg and vanilla, then beat until just combined and creamy, about 1 more minute. Don't overbeat. Set aside.
    3
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves until well combined. Set aside.
    4
In a large bowl, whisk together the granulated sugar, brown sugar, and pumpkin puree until smooth. Add the oil and whisk until combined. Add the eggs one at a time, whisking well after each addition. Whisk in the sour cream, vanilla extract, and milk until smooth.
    5
Add the dry ingredients to the wet ingredients and gently fold with a rubber spatula until just combined. The batter will be thick and slightly lumpy. Don't overmix. If using chocolate chips, gently fold them in now, reserving a small handful for topping if desired.
    6
Pour half of the pumpkin batter into the prepared pan and spread evenly. Spoon the cream cheese filling over the batter, staying about 1/2 inch away from the edges. Pour the remaining pumpkin batter over the cream cheese layer and spread to cover completely.
    7
Use a butter knife or skewer to gently swirl through the batter in a figure-8 motion 2-3 times. Don't overdo it; you want distinct layers of cream cheese, not a fully mixed batter.
    8
Mix the cinnamon sugar topping ingredients in a small bowl and sprinkle generously over the top of the loaf. Scatter any reserved chocolate chips on top if using.
    9
Bake for 65-70 minutes, until a toothpick inserted into the bread portion (not the cream cheese) comes out clean or with just a few moist crumbs. The top should be deep golden brown and spring back when lightly pressed. If the top is browning too quickly after 45 minutes, loosely tent with aluminum foil.
    10
Let the bread cool in the pan on a wire rack for 15 minutes, then use the parchment overhang to lift it out of the pan. Cool completely on the wire rack before slicing, at least 1 hour. The cream cheese layer needs time to set.

    Equipment

    • 9x5-inch metal loaf pan
    • Parchment paper
    • Mixing bowls (3)
    • Whisk
    • Hand mixer or stand mixer
    • Rubber spatula
    • Measuring cups and spoons (or kitchen scale, preferred)
    • Aluminum foil (for tenting if needed)

    Tips

    • •Oil keeps quick breads moister and softer than butter for days. Don't substitute melted butter here or the texture won't be as good.
    • •Sour cream is key for moisture and tenderness. You can substitute full-fat plain Greek yogurt if needed.
    • •Make sure your eggs, sour cream, and cream cheese are at room temperature for 1-2 hours before baking. Cold ingredients don't mix as smoothly and can create a dense texture.
    • •Milk is the standard choice. Orange juice adds a subtle brightness that enhances the pumpkin flavor without tasting like oranges. Either works great.
    • •Fold the batter gently until just combined. Overmixing develops gluten and makes the bread tough and dense instead of tender.
    • •Start checking for doneness at 65 minutes. The center should spring back when lightly pressed, the edges should pull slightly away from the pan, and a toothpick inserted into the bread (not cream cheese) should come out clean with just a few moist crumbs.
    • •This bread tastes even better on day 2 once the flavors have melded. Store tightly wrapped at room temperature for up to 4 days, or refrigerate for up to 1 week.
    • •Wrap the cooled loaf tightly in plastic wrap, then aluminum foil. Freeze for up to 3 months. Thaw overnight in the refrigerator.

    Troubleshooting

    • Issue: Top is browning too quickly
Solution: Loosely tent with aluminum foil.
