    North Dakota Caramel Rolls

    These rolls come out shining like butterscotch. North Dakota folks bake them in a lake of brown sugar and cream so every edge is coated. You flip the whole pan and that caramel rivers down the sides. Make them for someone who needs a good morning.

    Ingredients

    Dough

      • 425 Flour g
      • 240 Milk g
      • 50 Sugar g
      • 45 Butter g
      • 1 Egg
      • 5 Yeast g
      • 6 Salt g

      Caramel

        • 150 Brown sugar g
        • 85 Butter g
        • 60 Cream g
        • 15 Corn syrup g
        • 4 Vanilla g

        Filling

          • 30 Butter g
          • 6 Cinnamon g
          • 50 Sugar g

          Instructions

          Simmer caramel ingredients to 108C, then pour into pan and cool.

          Knead dough for 8 minutes, then let rise for 60 minutes.

          Roll dough to 30x40cm, spread with butter and cinnamon-sugar, then roll tightly.

          Cut rolled dough into 12 pieces and place in the caramel.

          Proof for 45 minutes.

          Bake at 180C for 25 minutes, then flip immediately.
