Lemon & Thyme Focaccia

A bright, aromatic twist on classic focaccia. Lemon zest and fresh thyme create a Mediterranean flavor that's perfect with seafood, salads, or simply dipped in balsamic.

Ingredients
- 500g (4 cups) Bread flour
- 375g (1½ cups + 2 tbsp) Warm water
- 60g (¼ cup) Olive oil
- 10g (2 tsp) Sugar
- 10g (2 tsp) Salt
- 7g (2¼ tsp) Instant yeast
- 2 lemons (2 lemons) Lemon zest about 2 tbsp
- 2 tbsp (2 tbsp) Fresh thyme leaves only
- 1 tsp (1 tsp) Flaky salt

Mix flour, sugar, salt, yeast, and half the lemon zest. Add water and oil.

Mix and knead until smooth. Rise 1.5-2 hours.

Transfer to oiled pan. Stretch to edges, dimple surface.

Top with remaining zest, thyme, olive oil, flaky salt.

Rise 30-45 minutes.

Bake at 425°F (220°C) for 20-25 minutes until golden.

- •Zest only the yellow part—white pith is bitter.
