Cinnamon-Sugar Kuchen 2025 Edition

You know how some cakes feel like they belong on the table before the coffee even finishes brewing? Kuchen does that. It's soft, not too sweet, with a cinnamon ripple that melts into the crumb. The top gets a little crackly from the sugar you dust on after baking. This one travels well. Wrap it, slide it into a cake box, and hand it to a neighbor who's had a long week. They can slice it warm, or wait until morning. Either way, it feels like comfort.

Dry
- 300 Flour
- 60 Sugar
- 8 Baking powder
- 3 Salt
- 1 Nutmeg
Wet
- 180 Milk
- 60 Sour cream
- 1 Egg
- 6 Vanilla
- 45 Melted butter
Ripple
- 30 Butter
- 50 Brown sugar
- 6 Cinnamon
- 40 Pecans optional
Finish
- 1 tbsp Sugar
- 1/2 tsp Cinnamon

Heat oven to 190C/375F.

Whisk dry ingredients.

Whisk wet ingredients.

Fold together dry and wet ingredients.

Spread half of the batter into the pan.

Add ripple mixture.

Top with remaining batter.

Bake for 28-30 minutes.

Cool for 10 minutes and dust with cinnamon-sugar.
