Ingredients
- 300g (2½ cups) All-purpose flour
- 240ml (1 cup) Apple cider reduced to ½ cup
- 200g (1½ cups) Fresh apples peeled and diced
- 150g (¾ cup) Brown sugar
- 115g (½ cup) Butter melted
- 2 large (2) Eggs
- 2 tsp (2 tsp) Cinnamon
- ½ tsp (½ tsp) Nutmeg
- 1½ tsp (1½ tsp) Baking powder
- ½ tsp (½ tsp) Salt

Reduce apple cider by half by simmering in a saucepan. Cool completely.

Preheat oven to 350°F (175°C). Grease and flour loaf pan.

Whisk together flour, spices, baking powder, and salt.

In another bowl, combine melted butter, brown sugar, eggs, and reduced cider.

Add wet ingredients to dry, fold in diced apples.

Pour into prepared pan and bake 50-55 minutes until a toothpick comes out clean.

Cool in pan 10 minutes, then turn out onto rack.
