Yeast Water
Natural leavening from fermented fruit, no starter required.
Overview
Yeast water is the third path. Not commercial yeast, not a sourdough starter, but wild yeast captured from fruit. Raisins, apples, figs, even berries can give you a leaven that's lighter than sourdough and more flavorful than packaged yeast. The bread comes out tender, mildly sweet, and beautifully open. This page walks you through the whole method. How to start your fruit ferment, when it's ready to use, how to convert any recipe to yeast water, and how to keep a yeast water culture alive long-term. If sourdough feels too sour or too slow, this is the alternative most bakers don't know exists.
